Aww, thanks Sarah. You're one of my favorite guinea pigs. :)

Alannah, I debated between pecans and walnuts - walnuts won, but just barely. Try them with pecans!

Wayne, I'm glad to hear other people enjoy Ina as much as I do - no shame!

Kristin, I hope your office enjoys the muffins - and I'd love to hear how they turn out.

Bev, Aaron's smoothies are legend!

And thank you so much for sharing your recipe, Milton! I love any baked good with orange. These sound amazing - I'll have to get the Date Quick Bread mix next time I'm at Marvin's.

This is exactly what we do with our overripe bananas! However, after I read this amp-ed up recipe (much different than my old school recipe) with the Ozark Natural Breads’ Dark Chocolate Almond Granola, I was practically wiping the drool from my chin. So, I went to IGA and bought some today!

Know what else IGA has? Pillsbury Date Quick Bread mix that I have an incredible orange date muffin recipe for and haven't been able to find it around town for over year now. Can't wait to bake!

For my fellow muffin lovers:

Orange Date Muffins

1 (16.6 oz) pkg. Pillsbury Quick Bread muffin mix with dates
1 c. orange juice
1/2 c. butter, melted
1 large egg, lightly beaten

Stir together all ingredients, spoon batter evenly into lightly greased muffin pans, filling 3/4 full. Bake at 400 degrees for 12-15 minutes or until golden. Remove muffins from pan immediately and cool and wire rack.

We have the exact same problem. Speckled nana's come Saturday morning. Aaron usually uses them up in his famous smoothies or banana bread, but this...this has to be done. And coconut, yes please.

I was lucky enough to have one of these and goodness gracious it was delicious. Toasted with butter put these muffins over the top. I always have left over bananas too, so hopefully I will attempt to make these soon!
