Colton’s demolished for construction of Chuy’s in Fayetteville

FAYETTEVILLE — Construction can soon begin on a new Chuy’s restaurant in north Fayetteville now that Colton’s Steak House & Grill has shut down and been demolished.

The site at 642 E. Millsap Road was sold earlier this month to Chuy’s Opco Inc., according to Washington county property records.

News of Chuy’s replacing Colton’s was first reported by the Fayetteville Flyer in April when property records were posted showing a survey and site plan prepared by engineering firm Olsson and Associates.

The Austin, Texas-based casual-dining brand got its start in 1982. The restaurant’s menu focuses on traditional Tex-Mex fare, including tacos, burritos, enchiladas, fajitas, and other items.

Chuy’s currently operates 95 restaurants across the country, most of which are in Texas and other southern states.

The Fayetteville restaurant will be the second in the region. A Chuy’s opened on Pauline Whitaker Parkway in Rogers in 2013.
