Zelli Pasta has recently opened in downtown Springdale on Emma Avenue. They’re located near the Jones Center & Springdale airport. You can purchase their line of dried pasta, freshly made pasta that they sell out of their deli fridge, Italian and specialty meats freshly sliced, and Italian imported cheeses along with other Italian specialty items. Beer & Wine coming very soon!
Insider tip: They sell stuffed raviolis (made fresh that morning) every Saturday. They have a pre-order available on Thursday if you want to reserve yours (they usually sell out within 30 minutes to an hour of opening Saturday morning). You can pre-order anytime in-store each Thursday. The other option is to order online Thursday evening. They send out an email at 7pm (so join their email list) and then post on social media an hour or so after.

What makes Zelli pasta special?
Zelli pasta has a little different look, feel, and quality than most are used to. There are a few reasons for this:
- Zelli pasta is made using bronze extruder dies. They leave the pasta with a rougher surface area for sauce to cling to. Most large manufacturers use Teflon dies because they are more efficient and easier; however, the pasta ends up being shiny and slippery. Not a good combo for sauce.
- They use high quality organic durum wheat flour. This flour is all sourced from organic farms in North America, then milled in the USA. This flour and water are the only two ingredients.
- Zelli pasta is dried slowly, which is the old way of drying pasta. Large manufacturers have large machines that they put the pasta into to dry it very quickly, but this almost cooks the pasta, which removes nutritional benefits and flavor. Zelli pasta is left out to dry in a temperature and humidity-controlled room for 36 hours to slow the drying process.
